A powerhouse of a Napa Cab — yet dry, clean, and elegant. Complex flavors of cherry kirsch, strawberry seed, ripe plum, tart rhubarb, cranberry, and dark, sun-ripe blackberry greet the palate in this fruit-forward wine. Flavors of fresh, bright mint, salty black licorice, anise, black olive, and caramel follow. A beautiful tension between (the illusion of) salt and acidity. Wonderful, long, creamy finish.

“One of the top wines of my career,” Kristof said when we tasted the ‘09 recently. “True terroir is having a totally dry, 100% dry, wine that still tastes like the sweet, ripe grapes you picked. That is the Holy Grail. You can’t fake that. Plus the tannins, the structure. But people try to fake that fruit, and you cannot.”

We recommend using a business delivery address to receive wine shipments, as we are required by law to have an adult (over age 21) signature for wine deliveries. UPS will make 3 delivery attempts, and the customer will then be billed $24.00, in addition to return shipping costs.

A note on corks and decanting in older wines:  We recommend using a dual-pronged Ah-So opener to gently, patiently finesse the cork. Gentleness is key, and individual corks vary, some prone to crumbling, others firm and easy to extract. If a cork crumbles or is pushed into the wine bottle, as sometimes occurs, we recommend decanting with a sieve. Decanting will only enhance the nuanced flavors of a mature wine.  Finally, shipping can disturb sediments in older wines, so some rare wine collectors recommend standing a bottle up to allow sediments to settle to the bottom before enjoying.

Please consider opening your bottle of PELLA Cabernet Sauvignon several hours before enjoying; while it isn’t necessary to do so, we find that the wines gain in complexity and length as they open, breathe, and evolve. (We frequently cork an unfinished bottle and find that it has “improved” the next day.) We don’t generally decant our PELLA Cabernets, though some people prefer to do so. Most of the sediment clings to the shoulders of the wine bottle; any sediment in the glass is proof that the wine is a natural product that has not been filtered or fined.
